Meal plan for the week:
Monday | Cobb salad
Tuesday | Cheeseburger soup, Apple muffins
Wednesday | Apple cinnamon soup, Cabbage-pork buns
Thursday | Gyros with Frensh fries and Tzatziki sauce
Friday | General Tso's chicken, rice, cabbage slaw
Saturday | Greek lemon chicken rice soup, crepes
Sunday | Brassói aprópecsenye (Hungarian dish with pork, peas, black pepper and potatoes)
This is out desk, husband's and mine. I covered it with a BATIK, a traditional and hand painted fabric that husband brought back for me from Indonesia. It kind of hangs over weirdly, but I don't care, I don't want to cut it. The desk was too cold without it. You may also notice my red hot tea thermos. Something to keep me warm on the inside. :)

What is this plant? Anyone has any ideas?
At 12:30 I went home to start preparing lunch. Meal schedule said Cheeseburger soup and Apple cake (new recipe). The apple dessert recipe is the most simple, most delicious thing ever!
This was my first time trying it and I must tell you, t'was the best I've had for a long time.
I made it gluten free so husband could enjoy it too.

The recipe calls for only 5 ingredients! Eggs,sugar, flour, apples, cinnamon. That's it.
You don't have to measure it, and you can adjust it and make as big a cake (or in my case, as many muffins) as you like.
The rule is:
You need an equal amount of eggs, sugar and flour in the batter. For example, just for the three of us I made a small batch. I used 2 eggs, dropped them in a mug. I marked how far they filled the mug and I used that to "measure" the same amount of sugar and flour. It yielded 5 muffins.
But if you want to make a bigger cake/ more muffins you simply raise the number of eggs, and measure the sugar and flour to them.
(I'm probably totally over explaining this.)
Anyhoooo... Then chop up a big apple and mix it with sugar and cinnamon. Spoon the (runny) batter into the muffin cups and scoop a pile of apples on top. Most of them will sink in, and I also helped it with a spoon. Just kind of push them down, the batter will rise around the apples anyway.
Preheat oven to 350F /175C and bake for 15-45 minutes depending on what form and how big you are making it. We out whipped cream on top and it was oh so yummy out of this world delicious!!

These two cuties I had just found last night at the Chinese store. They sell a whole bunch of garbage and useless junk, but! Sometimes I can find real treasures! I LOVE Japanese and Korean stationery, notebooks and pens. These are Chinese but in style very similar. And they were so cheap: 90 cents!! Even I can afford that, hehe!
