Quiche and cheesy chicken for lunch and supper

 I started planning my meals a week ahead again. I used to do that all the time while in school. It makes it easy to plan a grocery list and not having to go to the supermarket every day. Which I love.... except here its not like in Europe where I just walk over to the closest grocery store maybe 50 feet away from my home. In the US I actually have to put my boots and coat on, get into the car and drive a few miles to the shop. 
Anyway, meal planning spares me a few headaches... typical me standing in front of the open fridge with a blank expression and thinking the eternal question: WHAT SHOULD I MAKE FOR SUPPER TONIGHT?
Well, not this week! 
Meal plan/ WEDNESDAY LUNCH (and supper): 
Broccoli Smoked Ham Cheddar Quiche 
Cheesy Baked Chicken
Feta Avocado Salad


Broccoli Smoked Ham Cheddar Quiche
seiPie crust:
(my secret foolproof recipe. Works every time!)

3 cups flour
1 1/4 c soft shortening
1 teaspoon salt
1 egg, well beaten
5 Tablespoons water
1 Tablespoon vinegar or lemon juice

Mix well. Divide into 4 balls. Wrap them in plastic foil. Put them in the freezer, fridge or use them right away. 

seiFilling:
2 Tablespoons unsalted butter
2 cups diced onion
coarse salt, pepper
6 large eggs
3/4 cup heavy cream
3/4 lbs broccoli florets, chopped roughly
1 cup smoked ham, diced
1 cup grated cheddar cheese 

Preheat oven 375 degrees Fahrenheit. Lightly flower a rolling pin and roll out dough. Place it in a pan (square or round). Place a piece of parchment paper on the dough and fill it with pie weights or dried beans. Bake until edge is dry and light golden, about 20 minutes. 
Meanwhile, in a large skillet melt butter, saute onions, season with salt and pepper. Cook until light golden, 8-10 minutes. 
In a bowl mix together eggs and cream. Add broccoli florets, cheese, onions, salt, pepper. 
Pour unto crust. Bake until center of quiche is just set, 40-50 minutes. (I baked it for about 1 hour)


Cheesy Baked Chicken
2 large chicken breasts
1/4 lbs bacon
2 large eggs
1 cup grated cheddar cheese

Butter a baking pan. Preheat oven 375 degrees Fahrenheit. Slice up the chicken breasts, season with salt and pepper. Cut up the bacon into thin slices. Lay down a layer of bacon in the bottom of the pan. Dip the chicken pieces in beaten egg mixture, then lay them down in the pan on top of the bacon. 
Next layer: a handful of cheddar cheese. 
Next layer: bacon
Next layer: chicken
Next layer: cheddar. 
Bake it uncovered for about 50 minutes or until the top is golden brown. 
Serve it warm or let it cool and slice it up into bars. 

Feta Avocado Salad
Iceberg lettuce
cherry tomatoes
avocado, diced
Feta cheese 
drizzle with olive oil 
sprinkle with sea salt
