First... let me just say that I CANNOT MAKE COOKIES!
They just never work for me. They don't flatten out and they are definitely not chewy! No matter what recipe I tried (and believe me, I have tried many!) they just didnt work.
I had given up cookie-making all together for quite some time now. Up until I saw this recipe on Pinterest and it peeked my interest.
Recipe for two cookies? That is a brilliant idea!!
Since Scott, my husband has celiac disease, I always bake for him separately. So when I bake something for Benjamin and I, I always end up with a big batch and a bunch of leftovers!
I confess I was sceptical to try the recipe. (because of my cookie-making background)
But I was pleasantly surprised of just how EASY and FOOLPROOF this little recipe was!
And it only makes TWO COOKIES!!! How brilliant is that!! :) Hhah!! 

But enough of the talk, here is the recipe:
TWO CHOCOLATE CHIP COOKIES
Makes two large cookies
2 Tablespoon butter
2 Tablespoon dark brown sugar
1 Tablespoon granulated sugar
pinch of kosher salt
1/4 teaspoon pure vanilla extract
1 egg yolk
1/4 teaspoon baking soda
1/4 cup all-purp. flour
3 Tablespoon semi-sweet chocolate chips
Preheat oven to 350 degrees and line a baking sheet with parchment paper.
In a microwave safe bowl, heat butter just until it starts to melt and is softened. Blend softened butter, sugars, salt and vanilla together. Add egg yolk and stir again. Add baking soda and flour and stir until combined. Then stir in chocolate chips.
Drop two heaps of cookie dough on baking sheet. The cookies will spread during baking, so make sure they are several inches apart.
Bake for about 8-10 minutes, or until edges are golden brown.
Remove baking sheet from oven and give the baking sheet a firm, but careful bang on the counter top. This will deflate the cookie and give it a perfect wrinkly appearance.
They turned out PERFECTION!!! SO CHEEEEEEWY!!!
When they came out of the oven they are still very soft. Allow them 10-15 minutes to cool down and become super chewy! :)
Benjamin stuck little pieces of m&m in his cookie when I took them out of the oven.
I added walnuts to mine.
